New Addition-1

We added butternut squash a couple of weeks ago. Yes butternut squash is a winter squash but we need to plant it now to enjoy it in the winter!
Butternut squash is a member of the gourd family and is related to the pumpkin

Contains high amounts of beta carotene and trace amounts of the B vitamins and also contains iron, calcium, magnesium and potassium. Good source of fiber too!



Squash in general has an ancient history originating back to 3000 BCE, where the ancient American Indians commonly consumed what they called "the apple of God".  The seeds of squash were believed to increase fertility, thus were commonly planted close to many homes.  Another belief they had was that squash was so nutritious that they buried it along with the dead to provide nourishment on their final journey.
Originally grown for the seeds, with the evolution of the butternut squash plants produced fruit that had thicker skin, fewer seeds and less waste.  Butternut squash has a buttery orange flesh and a sweet taste.
This variety of squash was not commonly eaten until the 19th century, but is now the most widely grown winter squash, with  Florida being the largest producer in the U.S.

We love butternut squash...one of our best memories is eating Thanksgiving dinner under our tiki hut on Grassy Key in the Florida Keys...oceanfront breeze, orange sunset, and the best butternut squash ever!
